The 10” black-handled, Granton-edged cimeter knife is generally regarded as the Mercedes-Benz of knives and is an excellent alternative to the #40475 or #40539. The vertical grooves ground into the blade create an air pocket between the blade and meat while filleting.This prevents meat from sticking of to the blade to allow for perfect for fillets. Excellent for soft fish like salmon. This knife is also used extensively for large tuna, swordfish, and marlin.
